Pitta Pacifying Kitchari

I love my dishes to have robust flavors with alllll the spices. But being a Pitta dominant woman, I can easily get out of balance if I am not balancing the fire element properly. I love kitchari because it is a comforting dish that can bring so much flavor! I made this Pitta Pacifying kitchari for my Ayurvedic Soiree and it was a banger. I don't like measuring as it stifles my intuition with cooking 🤣. Here is the recipe:

 

red lentils (soaked for at least a few hours or overnight + rinsed thoroughly)

ghee

spices: turmeric, coriander, cumin, cinnamon, soma salt (more cooling than himalayan), fennel

coconut milk

tomato paste

tahini

brussel sprouts

sweet potatoes

basmati rice

toppings: shaved coconut, cilantro

 

Add red lentils, spices and ghee to a big pot and roast for 1-2 min until ghee is melted and spices are fragrant. Then, fill the pot halfway with distilled water. Bring to a boil then simmer. In a separate bowl, add tomato paste, tahini and coconut milk and mix until smooth. Add to your big pot of lentils. Then, add brussels and cook until they are softened. Roast sweet potatoes in the oven. (You may add sweet potatoes to the pot as a boil, I just prefer them roasted for taste.) In a separate pot cook basmati rice. Option to mix the basmati rice and lentils together or leave separate. Top with coconut and cilantro and enjoy!
